The Mixha family

three generations, one table

Linda Mixha, the second generation in the family and our owner. You’ll find her running the kitchen line most weekends.
Jack and Betty Rushiti, smiling together in a studio portrait
Jack and Betty Rushiti, our founders. They opened Jessica’s in 1986 and started it all.

It started with Jack and Betty Rushiti, ethnic Albanians who left North Macedonia for the United States with a passion for great food and a gift for making anyone smile. In 1986 they opened a diner in Roscoe, Illinois, and named it after their daughter. Three generations later, the family is still cooking.

Fairview Farmers is where that story landed. Family-owned, family-operated, and the only restaurant in Fairview owned by people who actually live here.

1986

Jessica’s opens in Roscoe, Illinois

On June 1, 1986, Jack and Betty open Jessica’s on Edgemere Court, a modern twist on the classic American diner. It quickly becomes a gathering place for friends, family and neighbors. One of the Mixha family’s first jobs in America is bussing tables there.

2011

The next generation

Jack and Betty head to Texas and pass the torch. Linda Mixha takes over Jessica’s, the restaurant where the family earned its first paycheck in America, and keeps it what it has always been: a family favorite.

2021

Fairview Farmers

A building on Stacy Road that had been dive bar after dive bar, until the last one closed during COVID. The family took it over, found mold in the walls and rusted walk-ins, and gutted it to the wood frame. Ten months later, the earthy, modern, welcoming room you’re sitting in today opened its doors.

Today

Uskana Hospitality Group

Three generations in, the family business that began at a diner counter in 1986 is Uskana Hospitality Group: restaurants and properties from Illinois to Texas to New York. Jessica’s and Rock & Wok in Roscoe, Fairview Farmers here on Stacy Road, and Lule, opening in Chappaqua, New York. Still run by the family, still built on one idea: feed people like they’re at your table.

Why Fairview Farmers?

The first reason is the family’s roots: the Mixhas grew up working farms before they ever worked a kitchen. The second is a promise about what goes on the plate, the highest quality food we can find, sourced wherever possible from organic or local farms.

We’re proud to be the only Fairview restaurant owned by Fairview residents.
